    I used a Mexican style lager & Colby jack cheese and the beer taste really came through. As a result, adults loved it but kids didn't. Really nice recipe though.

    Used spotted cow beer and taste was great. My sharp white cheddar didn't melt as smooth as the Monterey so it had a gritty texture.

    I made this with cheddar, Monterey jack, and a German brew. I used as a dipping sauce for some roasted butternut squash as well as a sauce for some cooked macaroni noodles and both ways were delicious!
